Chef GRANT ACHATZ is a world renowned artist in the field of foods.
His philosophy includes Sensory experience, evoking nostalgic feelings when customers taste the food.
The design follows the concept of THEATRICS or more specifically PROMENADE THEATRE where the performers and audience move around the entire space provided. According to Achatz, This evokes the senses to the highest form and allows his customers to properly examine the food they are about to eat,
WALKTHROUGH
The walkthrough represents what is most important in a theatrical performance - the storyline. It is connected to the main kitchen through a series of counters where chefs create. Through this connection, the storyline of the food can be experienced by the customers, mainly;
1. Introduction of characters in a play = Introduction of ingredients of dish.
2. Main plot/ storyline/ plot twists = development of food as it goes.
3. Revelation/ Resolution = The decision made by customers on how the food tastes and what it made them feel.
